Victor and his wife, Kelsey, treated us to a couple of colorful, tasty, and easy-to-make dishes that proved to be very more-ish, especially when paired with crunchy tortilla chips. Picadillo
Serves 6-8
Ingredients
1 large potato, diced
olive oil
2 lbs - ground beef
3 medium tomatoes, diced
salt (to taste)
1 clove of garlic - chopped
1 lb - fresh peas
4 large carrots, diced
1/4 of small onion, chopped
Method
First, stir fry potatoes in olive oil. Take potatoes out from oil, set aside. To the remaining oil in the skillet, add the ground meat, tomatoes, salt, and garlic, and mix well. Once the meat is partially cooked, add potatoes and rest of ingredients. Simmer on medium heat for about 30 minutes.

Pico de Gallo
Serves 8-10
Ingredients
1/2 cup cilantro
1 medium onion
3 avocados (slightly firm)
3 medium tomatoes
1 tsp. salt (or to taste)
juice of half a lime
tortilla chips
Method
Chop everything. Mix together and add a teaspoon of salt (or to taste). Add the juice of half a lime.
Serve with chips.
