For the following recipes, some of the quantities are unknown. As with any cooking (even when the amount is spelled out for you), add these to taste, and don't be afraid to experiment! Russian Pork Chops
Ingredients:
1 egg
1 onion
1 Tbsp. mayonnaise
3 pork chops
1 cup flour
2 Tbsp. oil
1/2 tsp. salt
1/2 tsp. pepper
parsley and/or dill to taste
1 Tbsp. finely shredded Colby and Monterey Jack cheese
5 tsp (?) milk
Method:
1. Sprinkle pork chops with salt and pepper
2. Lightly tenderize chops
3. Break egg into a pan and add milk. Beat well.
4. Dip chops in egg mixture, then dip in flour.
5. Fry chops in oil. When they are done, transfer to casserole dish.
6. Dice onion and fry.
7. Mix fried onion, mayonnaise, and cheese.
8. Spoon onion mixture over chops.
9. Preheat oven and bake at 400 degrees for 30 minutes.

Potato SaladIngredients:
1 egg 1-2 salt cucumbers (similar to dill pickles) 2 (?) potatoes 1-2 carrots 2 Tbsp. peas 1/2 onion ground beef, sausage, or chicken (not too much) mayonnaise (add to desired consistancy) 1/4 tsp. salt 1/4 tsp. pepper parsley and/or dill to taste and for garnish |
Method: 1. Boil the potatoes and carrot. 2. Boil the egg. 3. Boil the meat. 4. Peel the potatoes, carrot, egg, and onion. 5. Slice the potatoes, carrot, egg, and cucumber. 6. Chop the onion and the meat. 7. Put everything into a bowl, add the peas, and mix in the mayonnaise, pepper, and salt. Season and garnish with parsley or dill. |
Beet Salad
Ingredients:
1 Tbsp. mayonnaise
1 large beet
1 large apple
1/4 cup (?) prunes
1/4 cup nuts (we used pecans or walnuts, I think)
1 clove (?) garlic
1 Tbsp. sour cream
1/4 tsp. salt
1 tsp. sugar
Parsley and dill to taste and for garnish
Method:
1. Boil the beet.
2. Peel the beet and apple.
3. Coarsly grate beets and apples.
4. Chop prunes, nuts, garlic, parsley, and dill.
5. Combine everything in a bowl. Mix in mayonnaise, sour cream, salt, and sugar.

Russian Pancakes/Crepes
Ingredients:
1 egg
3 apples
1 cup flour
1/2 cup oil
1/4 tsp. salt
2 Tbsp. sugar
1/4 cup water
1/2 cup milk
2 Tbsp. butter
1/2 tsp. baking soda
1/2 (?) Tbsp. vinegar
1 Tbsp. cinnamon
grapes for garnish
Method:
1. Peel and thinly slice apples.
2. Fry apples with sugar and cinnamon until apples are soft.
3. Allow fried apples to cool.
4. In a bowl, mix flour, water, milk, sugar, egg, baking soda, and vinegar.
5. Add oil to mixture.
6. Spoon batter onto a hot pan and fry until golden brown on both sides.
7. Put some apple mixture in the middle of each pancake. Fold in the top, bottom, and sides of the pancake to make a little parcel. Arrange folded side down and pierce with a toothpick to hold together. May stick a couple grapes on the toothpick to garnish.
