According to Dr. Na'Allah, Nigeria is a country of colorful people who love a party. A wedding may be the biggest party of a person's life, and food is a big feature of Nigerian wedding celebrations. The more people who come and share the feast, especially poor people, the more that celebration is blessed. Here are some tasty dishes that you can prepare - and don't forget to share the bounty! Seasoned White Rice
Simply boil water: 4-5 cups (may need more).
Add seasonings which include bouillon cubes, cumin seed, curry powder, seasoning salt, chopped onions and 3 tablespoons of vegetable oil.
Wash 4 cups of rice (20 servings) and add to boiling water.
Reduce heat and cook for 30 minutes or until done.

Plantains
Cut plantains into small round shapes.
Season with table salt or seasoning salt.
Deep fry until golden brown.

Fish Stew
Blend fresh tomatoes, chopped onions, some chili pepper.
Steam for 30 minutes.
Add 1/2 cup of vegetable oil.
Add seasonings – curry, thyme, onions, garlic, seasoning salt, bouillon cubes, lemon pepper.
Add pieces of whiting fish (can also use chicken, or a combination).
Simmer for 15-20 minutes.

Spinach Stew
Use the same sauce as for Fish Stew (above), but instead of adding fish, add cut spinach. Optional: may add cubed potatoes.
